Meyer Lemons

This year's Meyer Lemon crop from the tree in our backyard has been prolific. It seems the more lemons we pick, the more new ones keep cropping up. We are constantly on the look out for new recipes to use up our lemons before they go bad. In the past we've made sorbets, pies and curd. This weekend, J baked a Meyer Lemon Pound Cake.
He made it with cake flour so the cake had a velvety consistency and the lemon glaze gave it just the right about of "purse your lips" tang. It was delicious!
However, J still thinks the recipe could be perfected a bit more. He's trying to replicate the slice you can buy at Starbuck's which likely means adding at least one more stick of butter.
